Of all the fresh fish varieties coming in from shore, like halibut, cod, sole, or tilapia, the markets in Seattle have the greatest selection of big healthy salmon steaks that you can find anywhere. Although there are so many different methods, recipes, and techniques for cooking salmon, we are offering up a fun and easy recipe found at many pubs and casual restaurants around the city.

  • 1 ½ Lb Salmon Fillet, chopped into ½” pieces
  • 1 C Panko Breadcrumbs
  • ½ C Green Onions, finely chopped
  • 2 tsp Ginger
  • 1 Egg, beaten
  • 1/3 C Teriyaki Sauce
  • ¼ tsp Black Pepper
  • 2 Tbsp Brown Sugar
  • 2 tsp Sesame Oil
  • ½ C Mayonnaise
  • 1 Tbsp Sweet Chili Sauce
  • ½ tsp Sriracha
  • 2 Tbsp Olive Oil
  • 4 Large Rolls, split
  • 1 Large Tomato, sliced
  • Salad Greens

In a large bowl, combine the salmon, breadcrumbs, green onions, ginger, egg, teriyaki, black pepper, brown sugar and sesame oil. Use fingers to carefully combine and incorporate the ingredients, cover with plastic, and refrigerate. In a small bowl, mix together the mayo, chili sauce and sriracha. Cover and refrigerate. Heat 2 Tbsp vegetable oil to medium heat in a large skillet. With lightly greased hands, divide the salmon mixture into four patties about ¾” thick. Cook patties in the skillet for about 3-4 minutes per side. Prepare the rolls with salad greens, tomato and chili sauce. Serve salmon burgers on rolls and enjoy!
