Clam Cakes

Clam Cakes can be found throughout New England, including Connecticut, Massachusetts, Maine, but especially in Rhode Island, where quahog or fresh clams are used to give these fritters a nice briny flavor. Don’t expect to find these in every single restaurant throughout the region, but if you’re near the coast, in a seafood joint, or at the home of a clam fisher you’re certain to find these fluffy treats.

  • 1 ¾ C Flour
  • ½ C Milk
  • 2 eggs, beaten
  • 2 tsp Baking Powder
  • 2 tsp Salt
  • ½ tsp Black Pepper
  • 2 tsp Onion Powder
  • 2 tsp Garlic Powder
  • 1 6oz Can Minced Clams (with juice)
  • Vegetable Oil for Frying
  • Tartar Sauce

Combine all ingredients (except oil) in a large bowl and mix well to combine. Store in refrigerator to firm up. Heat enough vegetable oil to about 3” up the side of a pot to medium-high heat. When ready, use an ice cream scoop to scoop and quickly drop a blob of batter into the oil. Cook for 3-4 minutes and turn over with a metal spoon, cook for an additional 3-4 minutes. Cakes should be golden brown, and take care to notice if the cake leaks out from the middle as this bit needs to be cooked through as well. When finished, transfer to a paper towel-lined plate to dry. Continue with rest of batter until finished. Serve with tartar sauce.
