Lobster Mac-n-Cheese

Lobster Mac and Cheese

  • 1 Lb Cooked Lobster, chopped
  • 16oz Box Elbow Macaroni
  • ¼ C Butter
  • ¼ C Flour
  • 1 ½ C Milk
  • 1 tsp Salt
  • ½ tsp Black Pepper
  • 1 ½ tsp Ground Nutmeg
  • 12 Oz Sharp Vermont Cheddar Cheese, shredded

Melt butter in a medium saucepan on medium-high heat. When the butter starts to simmer slowly whisk in the flour until absorbed and allow the flour to cook for 30 seconds. Slowly whisk in the milk and reduce heat to medium. Add the salt, pepper and nutmeg to the saucepan and stir to combine. When the sauce begins to thicken slowly stir in the cheese, and keep mixing until cheese is melted and the sauce is uniformly smooth. Cook the macaroni in a separate pot and drain water when finished cooking. Pour the cheese sauce over the macaroni and stir well to combine.
